Content of heavy metals in grain fractions of different varieties of wheat as a health quality indicator

W pracy podjęto badania mające na celu stwierdzenie, czy występuje zależność między wielkością ziarniaków wybranych odmian pszenicy a zawartością metali ciężkich (Cd, Pb, Zn, Cu). Określono zawartość metali szkodliwych we frakcjach między odmianami pszenicy. Badano czy wielkość ziarna ma wpływ na zawartość badanych metali w odmianach Almari, Elena, Opatka i Zyta. Ponadto podjęto próbę sprawdzenia różnic między odmianami zbóż w obrębie jednej wielkości ziarniaków.
The aim of the study was to confirm the occurrence of a correlation between the size of grain of some wheat varieties and the content of heavy metals (Cd, Pb, Zn, Cu) which indicates the health quality of raw material and food. The content of harmful metals (cadmium and lead) as well as zinc and copper in four fractions (separated based on the sieve mesh size) in the grain of different wheat varieties (Almari, Elena, Opatka, Zyta) was measured. The possible effect of grain size on the content of heavy metals in the experimental wheat varieties was studied. Moreover, the differences in the content of heavy metals in grain within particular fractions between different wheat varieties were examined. It was found that the grain size of the experimental wheat varieties does not generally have an effect on the accumulation of harmful metals, i.e. lead and cadmium except for the Elena variety. In the latter variety, the heavy metal concentration increased with a decrease in the grain size. The 2.8x25 mm fraction of all the experimental wheat varieties contained the highest amounts of zinc and copper. The concentration of these metals decreased with a decrease in the grain size. The consumption wheat varieties had lower cadmium and lead contents but higher contents of copper and zinc when compared to the fodder varieties. Based on the experimental results, statistically significant differences (at significance level 0.05) were found in the content of metals within particular grain sizes between the wheat varieties. Due to the varied tendencies of metal content in wheat grain found in multiple studies, further research should be conducted into particular cereal varieties. (original abstract)
