Autor rozpoczął artykuł od wyjaśnienia procesu restrukturyzacji w gospodarce rynkowej. Następnie przedstawił praktyczny przebieg tego procesu na przykładzie przedsiębiorstw sektora gastronomicznego i podał wnioski.

In this article, the authors look at the issue of the restructuring of firms in the catering sector as an attempt to respond to the changes in the Polish market economy. The restructuring of firms in this sector or, more precisely, catering outlets, concerns key areas of activity, such as: employment, the structure and organisation of production, and management. In most catering outlets, the purpose of restructuring processes was to restore internal and external equilibrium and adjust them to the modern business environment. The need for catering outlets to build a competitive position has forced them to prepare and implement development strategies to enable organisational, productive and capital potential to be increased. The restructuring changes implemented in catering outlets have been mainly in the areas of production techniques, organisational structures, the financial system and human capital. On the basis of the conducted analysis of the functioning of catering outlets, the authors found that their condition depends on factors that are closely linked to the development of the market economy and, in particular, privatisation. Polish catering outlets have changed their appearance and the level and type of services provided. The catering sector is beginning to transform into a modern system, which, following Western models, is divided into exclusive restaurants, cafes bars, and fast food outlets. Summing up the theoretical deliberations the authors contend that the ongoing restructuring of the Polish catering sector is having a verv positive impact on the condition of its outlets, their appearance, and the quality of services offered, which is leading to greater competition in the sector.(original abstract)
