W opracowaniu omówiono dostępne dane z zakresu mikrokapsułkowania lipidów metodą suszenia rozpyłowego z wykorzystaniem skrobi modyfikowanej typu oktenylobursztynian skrobiowy (OSA). Omówiono właściwości skrobi OSA oraz przedstawiono dane odnośnie do efektywności mikrokapsułkowania i stabilności oksydatywnej mikrokapsułkowanego oleju w matrycach z jej udziałem. Skrobia modyfikowana typu OSA spełnia wiele wymagań efektywnego enkapsulanta, takich jak dobra rozpuszczalność w wodzie, tworzenie roztworów o niskiej lepkości, zdolność tworzenia filmów, a także stabilizowanie emulsji. Jako substancja stosunkowo niedroga może stanowić alternatywę dla gumy arabskiej czy preparatów białek mleka. Tak jak w przypadku innych hydrokoloidów węglowodanowych i białkowych stosowanie skrobi OSA w połączeniu z niskocząsteczkowymi cukrami prowadzi do zwiększenia efektywności procesu i uszczelnienia matrycy na działanie tlenu.(abstrakt oryginalny)

The aim of this review is to focus on the available data in the field of lipid encapsulation by spray drying using an octenylsuccinate (OSA) modified starch. The characteristics of encapsulation and the role of the components in the creation of the particles matrix of powdered oily substances were described. The properties of OSA starch, and data regarding the effectiveness of microencapsulation and oxidative stability of microencapsulated oil in the matrix with its participation were also presented. OSA starch fulfills a number of requirements of an effective encapsulant, such as good solubility in water, the formation of solutions of low viscosity, film forming ability, and the stabilization of the emulsion. As a relatively inexpensive material, it can be an alternative for gum arabic or milk protein preparations. As with other carbohydrate and protein hydrocolloids, the use of starch OSA in the combination with low molecular weight sugars, leads to the increased efficiency of the process and sealing matrix exposed to oxygen. The results show that the combination of amphiphile OSA starch and trehalose gives a possibility to obtain a stable powdered product.(original abstract)
