Badania zawartości kofeiny w naparach wybranych herbat zielonych z dodatkami smakowymi

Abstrakty
The aim of this study was to determine caffeine concentrations in infusions of selected green teas with component of fruit and without component of fruit. Various brands of bagged tea available on the local market were analyzed. Caffeine concentrations in tea infusions were determined by UV spectroscopy and thin layer chromatography (TLC). The caffeine content of the analyzed infusions varied subject to tea brand and brewing time. In the group of green teas with component of fruit, the highest caffeine levels were noted in TeaValley tangerine flavored tea, and the lowest caffeine concentrations were determined in Rose&Violet infusions. The plain green tea brand with the highest caffeine content was Tea Valley Green Classic, and the brand with the lowest caffeine concentrations was Feel Green. Caffeine concentrations in the analyzed infusions increased with brewing time. (original abstract)
Celem niniejszej pracy było wyznaczenie zawartości kofeiny w naparach wybranych her bat zielonych z dodatkami smakowymi oraz bez dodatków smakowych. W badaniach użyto herbat ekspresowych produkowanych przez różne firmy, dostępnych na lokalnym rynku. Do wyznaczenia zawartości kofeiny w naparach herbat zastosowano spektroskopię UV, ekstrakcję ciecz-ciecz oraz chromatografię TLC. Ilość kofeiny w naparach herbat zależała od rodzaju herbaty oraz czasu jej parzenia. Wśród herbat z dodatkami smakowymi największą zawartość kofeiny wykazywały napary herbat TeaValley z mandarynką, najmniejszą koncentrację tych związków wykazywały napary her bat Green Tea Asian Temple Rose & Violet. Wśród herbat zielonych bez dodatków smako wych największe stężenie kofeiny wykazały Tea Valley Green Classic, zaś najmniejsze napary herbat Feel Green. Nie stwierdzono powstawania trwałych kompleksów kofeiny z dodat kami smakowymi herbat. Natomiast zauważono, że zawartość kofeiny w naparach herbat wzrasta wraz z wydłużaniem czasu zaparzania naparu.
