Abstrakty
Mleko fermentowane charakteryzuje się większą, niż zwykłe, przyswajalnością białek i tłuszczu, większą zawartością kwasu foliowego, magnezu, wapnia, pozytywnie wpływających na układ nerwowy. Najbardziej znane rodzaje takiego mleka to jogurt i kefir. Kefir zawiera składniki bioaktywne, przynoszące wyjątkowe korzyści prozdrowotne, działa jako przeciwutleniacz, redukuje poziom cholesterolu. Fermented milk absorbs higher amounts of proteins, fat and folic acid compared to milk; higher folic acid, magnesium, calcium contents have a beneficial impact on the nervous system. Yoghurt and kefir are the most popular kinds of fermented milk. Kefir has bioactive components having exceptional effects on health; it acts as an antioxidant and reduces cholesterol levels.
