Scharakteryzowano strukturę organizacyjną i własnościowa zakładów sektora owocowo-warzywnego. Szczegółowo opisano rangę i specyfikę polskiego ogrodnictwa, zwracając uwagę na sytuację ekonomiczno-finansową zakładów i kierunki rozwoju.

Increase in consumption of fruit and vegetable is accompanied by their processing, which is constantly developing and modernising. Nowadays juice production and freezing is predominant, whereas production of compote is diminishing. Fruit-vegetable processing plants are now privatised and currently they are undergoing the second phase of restructuring with the help of domestic and foreign investors from the same industry or of financial kind. Financial situation of the industry is weak, nevertheless it is enabling the growth of capacity and modernisation of production technology. Processing business is helped by the development of fruit and vegetable. The structure of planted trees and bushes and the area of growing various kinds of vegetable is changing. Although supply of fruit and vegetable is sufficient however it is characterised by great split among many suppliers and therefore small batches of uneven quality. Modernisation of a source base is taking place slowly and is fare insufficient for current needs. Both fresh and processed products are exported with the dynamic import of processed items and fruit, especially from southern countries. The trade balance of international exchange of fruit and vegetable products is closing zero, whereas some years ago it was significantly positive. (original abstract)
