The aim of the study was to present the European legislation in the field of food safety as well as to characterize the organizational units standing for the control of food safety. In 2002, the EU introduced a regulation establishing the general principles and requirements of food law and in 2004 the procedures on official controls performed to ensure the verification of compliance with feed and food law were introduced. In Poland, the authorities responsible for food control are the Main Veterinary Inspection, the Main Inspectorate of Plant Health and Seed Inspection, the Quality Inspection of Agricultural Food Products (subordinate to the Minister of Agriculture), the State Sanitary Inspection (subordinate to the Minister of Health) and the Trade Inspection (the Office of Competition and Consumer Protection). The presence of a large number of organizational units responsible for the control of food prompted the Minister of Agriculture to propose a single body, the State Inspectorate of Food Safety. The implementation of the project is connected with the great structural, organizational and logistical efforts as well as with participation of human resources. Still, the financial and organizational aspects of the project have not been documented. (original abstract)
