Żywienie jest jednym z najważniejszych czynników wpływających na stan zdrowia. Codzienna dieta powinna dostarczać wszystkich niezbędnych składników odżywczych. Żywność może jednak zawierać również substancje niepożądane. Niektóre substancje, obecne w pokarmie, mogą mieć zły wpływ na tkanki i narządy wewnętrzne. Przykładem takich substancji są metale ciężkie, między innymi rtęć, która w dużych ilościach gromadzi się w niektórych gatunkach ryb. W artykule omówiono zagadnienia związane z zanieczyszczeniem ryb rtęcią. (abstrakt oryginalny)

Food is one of the most important factors affecting the health condition. Everyday diet should supply all necessary nutrient ingredients. However, food may also contain undesired substances. Some substance, present in food, can have an adverse impact on tissues and internal organs. Examples such substances include mercury which accumulates greatly in some fish species. The article discusses issues related to fish contamination with mercury. (original abstract)
