Abstrakty

Branża gastronomiczna była jedną z lepiej prosperujących gałęzi usługowych w dzielnicach śródmiejskich. W momencie pojawienia się pandemii COVID-19 sytuacja ta uległa szybkiej zmianie i ukazała brak odporności tego sektora na podobne wstrząsy. Niniejsze opracowanie ma na celu przedstawienie kondycji branży gastronomicznej w centrach miast w pierwszych miesiącach trwania pandemii COVID-19. Badania terenowe zostały przeprowadzone w okresie maj - sierpień 2020 r. w Krakowie i obejmowały obszar historycznego centrum tego miasta (Stare Miasto i Kazimierz). W trakcie zamrożenia gospodarki, część branży gastronomicznej działała na wynos lub z dostawą, w większym stopniu na Kazimierzu (39% lokali) niż na Starym Mieście (zaledwie 26,5% lokali), gdzie spora część lokali od lat nastawiona jest na turystów. W Krakowie w porównaniu z innymi miastami na świecie, ograniczenia przestały obowią- zywać już 18 maja 2020 r, w związku z czym, w sezonie wakacyjnym zdecydo- wana większość lokali zaczęła normalnie działać a liczba podmiotów, które nie zostały ponownie otworzone była mniejsza niż 10%. Z badań i obserwacji wynika jasno, że lokale, które nie były nastawione na turystów, mają wyższej jakości usługi, posiadają letni ogródek i oferują szerszy zakres usług (napoje alkoholowe, lunch) mają znacznie większe szanse na prze- trwanie pandemii COVID-19, jak i innych podobnych załamań w przyszłości.(abstrakt oryginalny)

The gastronomy industry was one of the most prosperous service branches in historic downtown districts. When the COVID-19 pandemic started, this situation changed quickly and showed the lack of resistance of this sector to such shocks. The following study is intended to present the condition of gastronomy in city centers in the first months of the COVID-19 pandemic. A field research was conducted in the period of May through August 2020 in Krakow and covered the area of the historical center (Old Town and Kazimierz). During the freezing of the economy, part of the gastronomy operated on take-away or delivery, to a greater extent in Kazimierz (39% of the premises) than in the Old Town (only 26.5% of the premises), where a large part of the premises have been focusing on tourists for years. In Krakow, in comparison to other cities in the world, the restrictions ceased to apply as early as May 18, 2020, so during the holiday season, the vast majority of establishments started to operate normally and the number of those that were not opened was less than 10%. The research and observations clearly show that the premises that were not tourist-oriented, have a higher quality of services, have a summer garden, and offer a wide range of services (alcoholic beverages, lunch) stand a much better chance to survive the COVID-19 pandemic and other similar breakdowns in the future.(original abstract)
