Assumptions, Principles and Future of Predictive Food Microbiology

Abstrakty
W publikacji przedstawiono główne zasady modelowania matematycznego w mikrobiologii żywności. Omówiono przykładowe modele prognostyczne wzrostu, inaktywacji i przeżywalności drobnoustrojów. Ustosunkowano się także do zastrzeżeń zgłaszanych w stosunku do istniejących modeli mikrobiologicznych i realnych możliwości ich praktycznego zastosowania. (abstrakt oryginalny)
Main principles o f mathematical modelling in food microbiology were presented in the paper. Exam ples o f predictive models o f growth, inactivation and survival o f microorganisms were discussed. Attitude towards microbiological model limitations and realistic possibilities o f their practical application was done. (original abstract)
