Celem pracy była ocena jakości mleka spożywczego homogenizowanego dostarczanego codziennie konsumentom.

Milk and its products, because of their chemical composition and nutritive value of individual components, are of great importance in people's diet. Milk proteins and fat are easily digestible and lactose is the sugar that the human body can obtain only from milk. Besides, milk contains mineral salts and all the vitamins (some of them in small amounts). Because of the exceptional nutritive value of milk the problem of its quality is of special importance. The aim at the studies was to assess the quality of homogenized milk delivered to consumers every day. The studies were performed on the basis of the Polish Standards PN-68/A-86122 and PN-90/A-86003. The organoleptic and chemical analyses showed that the tested milk can be qualified as fresh and of good quality. The examination of the packing showed that producers should pay greater attention to proper marking, especially to placing the information about the keeping quality. It is inadmissible to deceive consumers by filling the container with milk containing less fat than it is declared on the packing. (original abstract)
