Przedmiotem artykułu jest analiza zmian parametrów jakościowych produktów pakowanych w modyfikowanej atmosferze w zależności od rodzaju opakowania i wyjściowego składu mieszaniny gazów w opakowaniu. Materiał doświadczalny stanowiły orzeszki ziemne pakowane w dwa rodzaje opakowań, tj. torebki z laminatu metalizowanego oraz puszki z blachy stalowej. Badania prowadzono w cyklu 1-tygodniowym w czasie przechowywania produktów w warunkach przyśpieszonych. Badania przechowalnicze dotyczyły takich parametrów jakościowych, jak: wskaźnik sensorycznej jakości całkowitej (WSJC), liczba nadtlenkowa (LN), liczba kwasowa (LK) oraz zawartość wody (X).

The object of this work is the analysis of the changes in the quality parameters of products packaged in modified atmosphere depending on the kind of packaging and the initial composition of the mixture of gases in the packaging. Peanuts packaged in two kinds of packaging (metal laminate bags and steel cans) were used as material for the experiment. Two alternative versions of the initial composition of gas mixture were used, that is: 0-1% O2 (100-99% N2) and 1-3% O (99-97% N2). The tests were performed during 13 weeks storage in accelerated conditions (T = 38°C±1°C i = 85%±2%) in 1 week cycle. During the storage test concern the changes of product quality parameters such as: the index of total sensorial quality (ITSQ), the acid value (AV), the peroxide value (PV) and water content (X) were analyzed. The tests revealed that the changes of specific quality parameters of products packaged in MAP are dependent of kind of packaging. Moreover, the composition of the initial mixture of gases in the packaging is an important factor affecting the changes of the quality parameters, in particular the index of total sensory quality, the acid number and the water content. The findings presented in the article constitute only a selected fragment of a comprehensive research on the factors affecting the quality of products in modified atmosphere packaging (MAP).
