Abstrakty
Peklowanie mięsa jest procesem znanym i rozwijanym już od starożytności. Mięso pekluje się w celu otrzymania dobrych jakościowo produktów i zapewnienia, przynajmniej częściowo, ich trwałości. Nowoczesna wiedza naukowa i technologiczna pozwoliła na rozwój zarówno nowych technik peklowania - automatycznych urządzeń peklujących, jak i na zastosowanie nowych komponentów do mieszanek peklujących. Od pewnego czasu jako dodatek do mieszanin peklujących mają zastosowanie mono- i polifosforany. Związki te wykazują różnorodne właściwości funkcjonalne, wpływając w dużym stopniu na jakość produktu finalnego. Mieszanki fosforanowe oferowane są na rynku przez różnych producentów. Niestety, zwykle ich skład ilościowy nie jest podawany, nabywcy informowani są zazwyczaj o zawartości w nich fosforu i sposobach stosowania. (fragment tekstu)

The article presents benefits resulting from using mono- and polyphosphates as additive to meat and meat products. Moreover, the authors briefly describe the scientific grounds for the influence of phosphates on the quality of meat products and their impact on the muscle tissue. The article also touches on restrictions of the application of phosphates resulting from relevant EU regulations, on the possibilities of marking phosphates in meat and meat products and on their nutritive value.
