Abstrakty
Ryboflawina oraz jej tzw. nukleotydy: mononukleotyd flawinowy (5'-fosforan ryboflawiny, FMN) i dinukleotyd flawinoadeninowy (FAD) (witamina B2) występują powszechnie w tkankach roślinnych i zwierzęcych. Oprócz nich pojawiają się również inne, mniej znane pochodne izoalloksazynowe i alloksazynowe ryboflawiny. Odkryto je głównie w płynach ustrojowych ludzi i zwierząt, w niektórych organach zwierząt, jak również niektórych produktach spożywczych. Do oznaczania witaminy B2 i jej pochodnych w produktach żywnościowych i próbkach biologicznych stosuje się metody mikrobiologiczne, fizykochemiczne i chromatograficzne, przy czym najbardziej dokładne są metody chromatograficzne. W artykule omówiono występowanie ryboflawiny i jej pochodnych w żywności oraz przykłady oznaczania flawin za pomocą wybranych technik chromatograficznych: wysokosprawnej chromatografii cieczowej, wysokosprawnej elektroforezy kapilarnej i chromatografii cienkowarstwowej. Riboflavin and its nucleotides: flavin mononucleotide (riboflavin 5'-phosphate, FMN) and flavin adenine dinucleotide (FAD) (vitamin B2) are ubiquitously present in plant and animal tissues. Besides them, there are also less known isoalloxazine and alloxazine derivatives of riboflavin. They have been mainly found in human and animal body fluids, as well as in some food products. Microbiological, physicochemical and chromatographic methods are used for determination of vitamin B2 in food and biological samples but chromatographic methods are the most accurate. In this article, properties and occurrence of riboflavin and its derivatives in food as well as examples of their determination with the use of high performance liquid chromatography (HPLC), capillary electrophoresis (CE) and thin-layer chromatography (TLC) are described.
