Spektrometria w bliskiej podczerwieni (NIR) jest jedną z najczęściej wykorzystywanych metod do badania produktów rolno-spożywczych. Główną zaletą tej metody jest krótki czas badania i wysoka precyzja uzyskiwanych wyników. W przemyśle rolno spożywczym może być wykorzystywany do badania składu podstawowego pasz, półproduktów i produktów rolnych. Natomiast w przemyśle przetwórczym mięsa znajduje zastosowanie zarówno do badania składu podstawowego, a także do prognozowania parametrów technologicznych takich jak barwa, kruchość, pH czy też zdolność utrzymania wody. Na podstawie badań przy użyciu NIR można także rozróżniać mięso pod względem rodzaju mięśni, płci, wieku oraz rasy zwierzęcia, z którego pochodzi, czy sposobu jego żywienia. Odpowiednie udoskonalenia konstrukcyjne umożliwiają przeprowadzenie szybkich nieinwazyjnych analiz na dowolnym etapie produkcji - począwszy od badań półtuszy a kończąc na wyrobie gotowym. Celem pracy jest analiza możliwości wykorzystania NIR w badaniach mięsa wołowego. (abstrakt oryginalny)

Spectometry in near infrared is one of the most frequently used methods for investigating agro-food products. The main advantage of this method is a short time of investigation and high precision of obtained results. In the agri-food industry it may be used for investigating basic composition of fodders, half-products and agricultural products. Whereas in the meat processing industry it is used for investigating both the basic composition as well as forecasting technological parameters such as colour, brittleness, pH or ability for retaining water. On the basis of investigation based on NIR, meat may be differentiated on account of type of muscles, sex, age and breed or the feeding way. Proper structural improvements enable to carry out fast non-invasive analyses on any production stage - starting from half-carcases tests and finishing with a ready product. The objective of the paper is to analyse the use of NIR in research on beef. (original abstract)
