Celem pracy była próba wykorzystania nowego naturalnego emulgatora Q-Naturale ® (jest to preparat handlowy firmy Ingredion) w emulsjach napojowych stosowanych do produkcji napojów aromatyzowanych oraz ustalenie optymalnych dla niego parametrów procesu. W tym celu sporządzono emulsje zawierające 3% badanego preparatu. Jako próby referencyjne zastosowano powszechnie wykorzystywane emulsje z gumą arabską, której zawartość w emulsji wynosiła 18%, oraz ze skrobią modyfikowaną OSA (E1450) w ilości 12%. W uzyskanych emulsjach napojowych zbadano rozkład cząsteczek. W gotowych, sporządzonych na ich bazie napojach oznaczano mętność i lepkość, ponadto sprawdzono podatność na tworzenie się obrączki na powierzchni napoju oraz dokonano ich oceny sensorycznej. Uzyskane wyniki pozwalają stwierdzić, że zastosowanie preparatu Q-Naturale® nie wpłynęło istotnie na zmianę badanych właściwości fizykochemicznych emulsji napojowych oraz utworzonych z nich napojów w porównaniu z emulsjami i napojami przygotowanymi z użyciem gumy arabskiej. Ponadto zastosowanie Q-Naturale® w badanych emulsjach nie wpłynęło istotnie na zmianę stabilności gotowych napojów w czasie ich przechowywania. Preparat Q-Naturale® wydaje się odpowiednim naturalnym emulgatorem do tworzenia stabilnych emulsji napojowych.(abstrakt oryginalny)

The aim of this study was the attempt to apply the new natural emulsifier Q-Naturale ® (commercial product from the Ingredion company) in beverage emulsions, which are used in the production of flavoured beverages as well as to determine optimal process conditions for it. For this purpose an emulsion containing 3% of Q-Naturale® was prepared. As the reference served a commonly used emulsion formulated with 18% gum Arabic, with 12% of a chemical modified OSA starch (E 1450). In the prepared beverage emulsions the particle size distribution was measured. In diluted forms turbidity and apparent viscosity were measured and the susceptibility to ringing on the surface of the beverage was tested as well as the sensory evaluation was carried out. The emulsions prepared with Q-Naturale® did not show any significant differences in physical and chemical properties when compared to those made with gum arabic, and neither did the beverages produced from those emulsions. Moreover, the use of Q-Naturale® in examined emulsions did not show a significant difference in the stability of diluted emulsions in comparison to gum arabic. Q-Naturale® appears to be a suitable natural emulsifier for the production of stable beverage emulsions.(original abstract)
