The aim of the study was to evaluate curd-ripened fried cheese with an addition of butter (full-fat cheese) and low-fat cheese. Cheeses were evaluated during 6-week storage. A signifi-cant effect of fat content was found in texture, colour and sensory parameters of curd-ripened fried cheese. No changes in texture with storage time were recorded in low-fat cheese, in contrast to full-fat cheese. Irrespective of fat content colour parameters did not change with time. Sensory profile analysis showed significant differences between full-fat cheese and low-fat cheese immediately after production and during further storage. (original abstract)
Celem pracy była ocena tradycyjnie wytwarzanego sera smażonego na bazie skrzepu dojrzewającego z dodatkiem masła (referencyjny ser o pełnej zawartości tłuszczu) i sera odtłuszczonego. Sery oceniono w trakcie 6 tygodni przechowywania. Wykazano istotny wpływ zawartości tłuszczu na wyniki parametrów tekstury i barwy sera smażonego. Wraz z upływem czasu przechowywania nie stwierdzono zmian tekstury sera o obniżonej zawartości tłuszczu w przeciwieństwie do sera referencyjnego o pełnej zawartości tłuszczu. Niezależnie od zawartości tłuszczu parametry barwy sera nie zmieniały się w czasie. Analiza profilu sensorycznego wskazała na istotne różnice pomiędzy próbkami sera o różnej zawartości tłuszczu zaraz po wytworzeniu i podczas dalszego przechowywania. (abstrakt oryginalny)
