Effect of Rosemary Extract (Rosmarinus officinalis L.) on the Inhibition of Lipid Oxidation in Freeze-dried Muscle Tissue of Rainbow Trout (Oncorhynchus mykiss L.) During Storage

At present, freeze-dried products are one of the biggest groups of high quality dried products worldwide. They are good additives to ready meals, snacks, instant soups, cereals, bars and bread. Freeze-dried meat, seafood and vegetables match well with spicy fix or instant products. They soak quickly within a few minutes and freeze-dried ingredients give them the unique aroma [Anghel 2003, Anghel et al. 2005]. The aim of this study was to determine the effect of aqueous rosemary extract (Rosmarinus officinalis L.) (dilution 1:2), soaking treatment duration (10 and 20 minutes) and storage temperature (25°C and 4°C) on the inhibition of lipid oxidation in the minced muscle tissue of rainbow trout (Oncorhynchus mykiss L.), preserved by freezedrying and stored for four months. Determination of changes in lipid oxidation was based on the content of peroxides, secondary products of oxidation, conjugated dienes and trienes. The study have led to the conclusion that soaking the raw material in the rosemary extract prior to freezedrying inhibits efficiently lipid oxidation. Examining the Total Antioxidant Activity (TAA) of the aqueous rosemary extract demonstrated that the most effective was 20- minute soaking and storage at 25°C (23.13%) followed by 10-minute soaking and storage at 25°C (4.21%). Rosemary was found to have high antioxidant efficiency in protecting lipids in the freezedried muscle tissue of rainbow trout stored at two temperatures. It confirms that aqueous rosemary extract may be regarded as a good source of antioxidants to be used in the freezedried fish products. (original abstract)
Liofilizaty są obecnie jedną z największych grup suszonych produktów wysokiej jakości na świecie. Stanowią one bardzo dobry dodatek do gotowych dań, przekąsek, zup w proszku, płatków śniadaniowych, batoników oraz pieczywa. Liofilizowane mięso, owoce morza i warzywa znakomicie komponują się z pikantnymi produktami typu fix czy instant. Ulegają one szybkiemu nawodnieniu w ciągu kilku minut, a liofilizowane składniki nadają tym produktom niepowtarzalny aromat [Anghel 2003, Anghel i in. 2005]. Celem pracy było określenie wpływu dodatku ekstraktu z rozmarynu (Rosmarinus officinalis L.) (rozcieńczenie 1:2), czasu trwania kąpieli (10 i 20 minut) i temperatury przechowywania (25°C i 4°C) na hamowanie procesów oksydacyjnych frakcji lipidowej w zmielonej tkance mięśniowej pstrąga tęczowego (Oncorhynchus mykiss L.), utrwalonej w wyniku procesu liofilizacji, przechowywanej przez okres czterech miesięcy. Zmiany oksydacyjne lipidów określono na podstawie zawartości nadtlenków, wtórnych produktów utlenienia, skoniugowanych dienów i trienów. W wyniku przeprowadzonych badań stwierdzono, iż zastosowanie kąpieli surowca w ekstrakcie z rozmarynu przed liofilizacją, skutecznie ograniczyło proces oksydacji lipidów. Analiza Total Antioxidant Activity (TAA) wodnego ekstraktu rozmarynu wykazała, najskuteczniejsze działanie 20-minutowej kąpieli i przechowywania w 4°C (33.22%), następnie 20-minutowej kąpieli i przechowywania w 25°C (23.13%) i 10-minutowej kąpieli i przechowywania w 25°C (4.21%). Wykazano dużą efektywność antyoksydacyjną rozmarynu w stosunku do lipidów liofilizowanej tkanki mięśniowej pstrąga tęczowego, przechowywanej w dwóch wariantach temperatur. Stanowi to uzasadnienie uznania rozmarynu w postaci wodnego ekstraktu, jako dobre źródło naturalnych przeciwutleniaczy, w zastosowaniu do rybnych produktów liofilizowanych. (abstrakt oryginalny)
