Abstrakty
W pracy przedstawiono rodzaje zafałszowań win, takie jak: nieprawidłowa deklaracja odmiany winogron, regionu pochodzenia, winobrania, dodatek wody, cukru, glicerolu i barwienie win. Do wykrywania zafałszowań win stosuje się spektrometrię masową, jądrowy rezonans magnetyczny, atomową spektrometrię emisyjną, chromatografię gazową, chromatografię cieczową i elektroniczny nos. Analiza zafałszowań win jest narzędziem do wyeliminowania nieuczciwych producentów i utrzymania zaufania konsumentów na konkurencyjnym rynku UE. (abstrakt oryginalny)

In the paper, some types of wine adulteration were presented, such as: misdeclaration as regards grape variety, region of origin, or vintage; adding water, sugar, glycerol, and colouring wine. To detect the adulteration of wines, the following techniques were applied: mass spectrometry, nuclear magnetic resonance, atomic emission spectrometry, gas chromatography, liquid chromatography, and electronic tongue. The analysis of wine adulteration is a tool to eliminate unfair manufacturers and to maintain the consumer confidence in the competitive EU market. (original abstract)
