Celem badania była diagnoza zachowań konsumenckich na rynku pieczywa oraz ich uwarunkowań. Badanie ankietowe zrealizowano w 2012 roku w grupie 254 osób z wykształceniem wyższym. Ocenie poddano między innymi częstość i rodzaj nabywanego pieczywa oraz czynniki decydujące o zakupie pieczywa. Większość badanych kupowała pieczywo kilka razy w tygodniu. Codzienne zakupy pieczywa deklarowało istotnie więcej mężczyzn, osób w wieku 46-55 lat oraz pozytywnie oceniających dochód. Im starsze były osoby, tym bardziej ujawniały się u nich preferencje zakupowe dotyczące jednego rodzaju pieczywa. Bardziej popularne były zakupy pieczywa pszennego niż żytniego, także jasnego w porównaniu z ciemnym, przy czym płeć i wiek istotnie statystycznie różnicowały zachowania nabywcze. Kobiety preferowały zakupy pieczywa ciemnego, a osoby starsze - pieczywa mieszanego. Zakup pieczywa był najsilniej determinowany oceną smaku, zawartością błonnika i ceną. Uczestnicy badania wykazywali na rynku pieczywa duże zróżnicowanie opinii i zachowań, co wskazuje na konieczność uwzględniania tych różnic w ofercie produktowej oraz w sposobie informowania o produktach. An aim of the research survey was to diagnose consumer behaviours in the market for bread and determinants thereof. The survey was carried out in 2012 in the group of 254 people with higher education. There were assessed, inter alia, the frequency and type of bread being bought as well as the factors deciding the issue of bread purchase. The majority of respondents were buying bread several times a week. Daily purchases of bread were declared by significantly more men, individuals aged 46-55, and those positively assessing their income. The elder were the individuals, there more often they displayed purchasing preferences concerning one type of bread. More popular were purchases of wheat bread than rye, also white than dark, and sex and age statistically significantly differentiated purchasing behaviours. Women preferred purchases of dark bread, while elder people - mixed bread. Bread purchase was most strongly determined by assessment of flavour, fibre content and price. The research participants displayed in the market for bread great diversity of opinions and behaviours, what indicate the need to take into account those differences in the product offer as well as in the way of advising of products.
