Abstrakty
W pracy omówiono powstawanie ciasna pszennego ze szczególnym uwzględnieniem roli białek glutenowych w tym procesie oraz ich interakcji z innymi składnikami mąki. Przedstawiono również metody badań właściwości fizycznych ciasta, biorąc pod uwagę zarówno klasyczne metody reologiczne jak i testy, które mają największe zastosowanie praktyczne w ocenie jakości wypiekowej mąki pszennej. The paper discusses the wheat dough kneading process with particular emphasis on the role of gluten proteins in this process and their interaction between other components of flour. The paper also presents the methods for testing the physical properties of dough, taking into account both classical rheological methods and tests that have most practical use in assessing the quality of flour for baking purposes.
