Food defense program developed to protect food and food production processes from intentional food contamination threats by assessment of vulnerability and identification of security measures is required by voluntary food safety management systems standards (BRC, IFS, SQF and ISO 22002-1). In article some examples of intentional food contamination acts were presented and some fundamentals relating to food defense were described with consideration of food security and food protection. Moreover, some guideline references to the food defense defined by WHO, USDA, USFDA and BSI were characterized including such facilitating tools as CARVER + Shock method and Food Defense 101. The paper contains some general recommendations important during preparation of internal food defense plans within existing food safety management systems. (original abstract)

Program obrony żywności ustanawiany w celu ochrony żywności i procesów produkcyjnych przed groźbą intencjonalnego skażenia środków spożywczych poprzez ocenę podatności zakładu na ww. zagrożenie oraz ustanowienie środków ochrony umożliwiających opanowanie tego zagrożenia jest wymagany przez dobrowolne standardy BRC, IFS, SQF i ISO 22002-1. W artykule wskazano przykłady celowych zanieczyszczeń żywności i opisano zagadnienia związane z obroną żywności (food defense/defence), takie jak zabezpieczenie żywności (food security) i ochronę żywności (food protection). Ponadto scharakteryzowano źródła wytycznych do działań związanych z obroną żywności, zdefiniowane przez WHO, USDA, USFDA i BSI z uwzględnieniem narzędzi pomocniczych, takich jak metoda CARVER + Shock oraz pakiet Food Defense 101. Opracowanie zawiera także podstawowe zalecenia dotyczące tworzenia zakładowych planów obrony żywności w ramach istniejących systemów zarządzania bezpieczeństwem żywności. (abstrakt oryginalny)
