Przedmiotem badań była ocena zawartości sprzężonego kwasu linolowego cis9trans11 C18:2 (CLA) w mleku znormalizowanym przygotowanym do produkcji kefirów, w kefirach świeżych z niego wyprodukowanych oraz w kefirach przechowywanych w temperaturze 8±1°C przez 21 dni. Kefiry zostały wyprodukowane metodą termostatową. Na podstawie uzyskanych wyników stwierdzono, że czas przechowywania kefirów wpływa na zawartości CLA w kefirach. Przeprowadzone badania wykazały, że przechowywanie kefirów w temperaturze 8oC przez 21 dni spowodowało istotne obniżenie zawartości kwasu cis9trans11 C18:2 w kefirach. (abstrakt oryginalny)

The objective of the research study was content of conjugated linoleic acid cis9trans11 C18:2 (CLA) in milk prepared for kefirs production, fresh kefirs produced from it, and kefirs stored at 8 ±1°C for 21 days. Kefirs were produced using a thermostatic method. On the basis of the results found, that the storage time of kefirs influence the content of CLA in kefirs. The study showed that the storage of kefirs at 8 °C for 21 days resulted in a significant decrease content cis9trans11 C18:2 acid in kefirs. (original abstract)
